Some students have been inquiring about our sweet Great Dane, he was recently put to sleep this past summer, he was 9 years old. His name was Macabe, after a clydesdale horse my three kids rode during lessons when they were in elementary school.

Raspberry-Chocolate Cups

Ingredients

| 6 Tbsp semi-sweet chocolate chips |
|
| 3 Tbsp jam, raspberry-flavor |
Instructions
- Place chocolate chips in a small microwavable bowl and microwave on high, stirring every 15 seconds, until chocolate is melted and smooth, about 1 minute.
- Spoon 3/4 teaspoon of melted chocolate into a small foil candy cup (1-inch wide by 3/4-inch high). Use a small flat paint brush to spread chocolate evenly over bottom and up sides. Repeat with remaining cups, place them on a plate and refrigerate for 3 minutes or until chocolate is firm.
- Spoon 3/4 teaspoon of jam into each chocolate-lined cup. Tap bottom of each cup on counter to settle jam.
- Reheat remaining melted chocolate in microwave, stirring every 10 seconds, until chocolate is completely smooth. Spoon 1/2 teaspoon of melted chocolate over top of jam in a foil cup. Use brush to spread chocolate to sides so that it seals in jam. Repeat with remaining 11 foil cups.
- Refrigerate 3 minutes or until chocolate is firm, or allow chocolate to firm up at room temperature, about 3 hours.

- My idea to open a children's cooking center stemmed from years as an Elem. School Teacher, Physical Education, Dance, Health and Nutrition. With families on the go I wanted to give children an opportunity to work together to create nutritious choices using garden fresh pickins', helping plan family meals, prepare, and serve up great easy nutritious food for all to enjoy! One Saturday a month at high noon, families of Cowpoke Cooks are invited to the barn to enjoy family style sit-down meal, served up by class chefs! Afterward our cowpokes will demo a Line Dance for you! Nutrition and Exercise go hand in hand for a healthy lifestyle! Love of cooking came from my 'Nana' and mom, as well as practicing on my children when they were young! My lifestyle led to spending more time outdoors in the wilderness, on mountain tops, fording streams, skiing on iced-over lakes, bicycling up and down country hillsides, and kayaking to view water wildlife with camera in hand! Cooking is a passion, and now I want to share with our community : ). Looking forward to giving our next generation cooking skills in hopes of making it easier on families with busy lifestyles!
